The Zambelli PN-Zeta TOP Horizontal Pneumatic Press is constructed entirely of AISI 304 stainless steel. Through a soft and gentle pressing of the membrane, the Pneumatic Press has the ability to extract juice from whole grape clusters, destemmed whole grapes, and fermented and/or crushed grapes. The flow of the juice takes place through internal perforated channels which feed to external drain ports. The control board contains both a touchscreen PLC unit for automatic operation, as well as a physical pressure gauge and individual controls for each step of the pressing process for manual operation. The sliding Must Collection Bin is outfitted with a float sensor used to control the operator's transfer pump and prevent it from dry-running.
The drum can be filled manually through the load doors or automatically via the tri-clamp intake port. Automatic Fill mode features two filling options- "Intermittent", in which the drum alternates between a set number of clockwise & counter-clockwise rotations with set pauses between each rotation; and "Continuous", in which the drum continuously rotates until it is filled to 3/4 of its maximum capacity. Material can be loaded into the press manually through the sliding drum doors.
The control unit is loaded with 3 standard preset Pressing Programs (Normal, Slow, & Rapid) in which the Pressure, Press Time, Delta (allowable drop in pressure before membrane reinflates to set Pressure), Drum Rotations, Phase Time/Cycles (number of Working Cycles performed within an Operating Phase) are adjustable. All three Programs contain 3 - 4 Phases, consisting of 3 - 4 Cycles each. The PN-Zeta TOP also has three customizable Program Categories, each capable of storing up to five separate custom Pressing Programs.

PROGRAM A "CLASSIC"
Each Program is capable of 6 separate Operating Phases. The membrane expands at a consistent rate until it reaches the set Pressure and is held for the set Press Time, then deflates (the compressor reinflates the membrane if the pressure drops below the set Delta). Once the membrane is deflated, the Drum performs the set number of clockwise & counter-clockwise Rotations, completing one full Working Cycle. The Length of a single Phase can be set for a specific period of time, or set for a number of completed Cycles.
PROGRAM C "SPARKLING"
Each Program is capable of 3 separate Operating Phases. The membrane expands incrementally, with a maximum of 6 "steps" (increments) per Working Cycle. Each step has its own customizable Pressure, Press Time, & Delta that must be set. Once the final step has been achieved, the membrane is deflated and the Drum performs the set number of clockwise & counter-clockwise Rotations, completing one full Working Cycle. The Length of a single Phase can be set for a specific period of time, or set for a number of completed Cycles.

Operating Phases alternate between "Classic" Pressing (A) and "Sparkling" Pressing (C) with a maximum of 3 Operating Phases per Program.
