Potassium Sorbate prevents renewed fermentation in wine. It will not, however, stop an active fermenion. It is typically used prior to bottling to prevent carbonating your wine.
 
Recommended Use:
 
  • Add 1/2 - 3/4 tsp. per gallon of wine
